Blistered Tomato Toasts are a delightful combination of juicy roasted cherry tomatoes, fragrant basil, and savory Parmesan cheese atop crunchy toast. This recipe is bursting with flavors and makes for a perfect appetizer or light meal.
Ingredients:
- 1 pint cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of bread sourdough or your choice
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, torn
- 1/4 cup grated Parmesan cheese
Instructions:
Warm the oven up to 425F 220C
Add olive oil, salt, and pepper to cherry tomatoes that have been cut in half
Place them on a baking sheet
Tomatoes should be roasted in a hot oven for 15 to 20 minutes, or until they get blisters and soft
Toast the pieces of bread until they turn golden brown
Toast the bread slices and then rub minced garlic on them
Roasted cherry tomatoes should be put on top of each toast
Tear up some basil leaves and grate some Parmesan cheese on top of the tomatoes
Serve right away and enjoy!
